Ooey Gooey Caramel

One day a couple of weeks ago, I visited a friend in Nice who had recently had a sweet little baby girl. The friend had made some chocolate and caramel muffins for a snack (Which were fantastic, by the way.) and I just had to find out where she found caramel! Well, my friend happens to be a really talented pastry chef and she made the caramel herself. (Ugh. Don't you just hate over-achievers like that??) Lucky for us, she is a pastry chef who is ok with sharing her secrets which I will now pass on to you! (and we can all be over- achievers!)

Making caramel is much much easier than you would think. All you have to do is melt some sugar at a pretty high heat. Ok, there is a little more to it than that, but here is the picture progression and recipe!

Oh, if you need something to put this caramel sauce on, the Apple Torte from last week would be a fantastic with a little drizzle of caramel and a tiny bit of good vanilla ice cream!

Ok, Start by putting about a cup of sugar in a sauce pan over medium high heat. Start stirring!

You will notice the sugar melting and beginning to brown. Keep stirring!!

This is what you want it to look like when completely melted- A nice clear amber-color.


Remove sugar from heat and add about 3 Tbls of Real Butter.

Add 1/2 cup of cream. Stir stir stir until the cream is completely blended!


Ta-Da!! Beautiful caramel sauce. Great on Ice cream, apple pie, or by the spoonful.... ha!
